Suppose you or your other half were cooking, say carrots and/or potatoes and absent-mindedly – easily done in a normal absent-minded household, well, like mine – instead of salt, put in sugar – Sugar?! - and in quantity?!

Suppose you or she then put the saucepan on one side until one of you could think what to do about it and forgot about it - again, easily done. If the right organisms got in, do you know what you would finish up with? Well, you just could finish up with a very good wine.

Making wine or beer is no more complicated than that. But if you control which organisms enter and which do not, and do it according to a simple routine, you can eliminate the ‘just could’ element of uncertainty and finish up with a superb wine or beer every time – in quantity, with little or no effort and virtually free.
